Quick and easy lobster salad sandwiches. These are so easy to make thanks to frozen lobster that takes no time at all to thaw. Pile the lobster salad on rolls with lettuce for a no-cook hot-weather dinner or lunch.

People tend to take their lobster rolls seriously so let me just declare openly that I’m pretty sure the ones I’m sharing with you today are not authentic, which is why I’m calling them lobster salad sandwiches.

Toe-may-toe, toe-mah-toe – who really cares anyway?

You see, we are deep into summer heat and humidity and I’m looking for every excuse not to use the oven, the stove, the grill, or even the toaster so I turned to lobster salad sandwiches to bring a little coolness to a hot and steamy Saturday. The goal was simplicity, not authenticity.

“But, wait!” you might be thinking. “Don’t you have to steam or boil a lobster?”

Nope. I’m going to let you in on a little secret… I used frozen lobster. So, I’m not lying when I say these are easy – in the time it takes to thaw the lobster (I bought I package of lobster tail meat that was already cleaned and chopped into bite-sized pieces) I mixed together some mayo, celery, parsley, and lemon juice. Then I just tossed it all together and piled it into some soft rolls with a little butter lettuce.

No lobster boiling or steaming, no bread toasting or butter melting – just a few simple ingredients and 10 minutes to bring it all together.

These lobster salad sandwiches are very easy to make if you use pre-cooked lobster. They are cool and light, which makes them a perfect lunch or dinner option in the summer.

Ingredients

Scale
  • 8 ounces cooked lobster tail, cut into bite-sized pieces
  • 1/4 cup mayonnaise
  • 1 celery stalk, diced
  • 1 tablespoon chopped fresh parsley
  • Juice of 1/2 a lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 butter lettuce leaves
  • 4 top-split hot dog buns

Instructions

  1. In a medium bowl mix together the mayo, celery, parsley, lemon juice, salt and pepper. Add the lobster and gently stir it all together.
  2. Line each roll with a lettuce leaf and fill each with the lobster mixture.

Notes

If you use frozen lobster look for the kind that is already prepped and cut into bite-sized pieces. I found some in a freezer near the butcher’s counter at my grocery store. Follow the package instructions for thawing, which should only take about 10 minutes. If you can find fresh lobster already prepped buy that instead!
