This spaghetti with spinach and goat cheese is so simple to make – perfect for busy nights when you need a quick and easy dinner!

Ingredients

Scale
  • 6 ounces spaghetti
  • 2 tablespoons unsalted butter
  • 3 cloves of garlic, smashed
  • 1/4 cup heavy cream
  • 2 generous cup of roughly chopped fresh spinach
  • 4 ounces goat cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a pot of water to a boil. Cook the spaghetti according to package directions.
  2. In a 10-inch skillet, melt the butter over medium heat. Add the garlic and cook it in the butter just until it’s fragrant, stirring continuously. Add the cream and whisk it with the butter until combined. Once the cream starts to simmer, discard the garlic cloves.
  3. Add the spinach and stir. Once the spinach wilts into the sauce, add the goat cheese in small chunks. Stir until the goat cheese is melted and the sauce is creamy. Add the salt and pepper and stir. Reduce the heat to keep the sauce warm, stirring occasionally, until the pasta is ready.
  4. Transfer the cooked pasta to the sauce and toss it in the sauce.
