Buffalo Chicken Salad with crispy chicken coated in spicy buffalo sauce tossed with crisp lettuce, cucumber, tomatoes, and celery. Add a creamy blue cheese dressing, and you get a filling salad! 

Ingredients

  • 12 ounces frozen breaded chicken tenders
  • 1/2 cup buffalo sauce
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon 2% milk
  • 1 tablespoon chopped parsley
  • 3/4 cup crumbled blue cheese, divided
  • 4 cups chopped romaine lettuce
  • 2 cups coleslaw mix
  • 2 celery ribs, diced
  • 2 green onions, sliced
  • 1 cucumber, diced
  • 10 cherry tomatoes, halved

Instructions

  1. Cook the chicken tenders following the package instructions. Once they are cooked, slice them into bite-sized pieces and then place them in a bowl. Pour the buffalo sauce over the top and then stir gently to coat the chicken evenly.
  2. For the dressing, combine the sour cream, mayo, onion powder, salt, pepper, milk, parsley, and 1/2 cup of cheese in a large serving bowl. Pile the lettuce, slaw, celery, green onions, cucumber, and tomatoes on top of the dressing. Toss the salad together so the dressing is evenly coating the salad.
  3. Pile the buffalo chicken on top of the salad and sprinkle 1/4 cup of blue cheese crumbles over the top. Toss it all together again and it’s ready to serve.

Notes

You can make the dressing ahead and keep it in the refrigerator.

Instead of tossing the salad, you can layer the lettuce with the rest of the ingredients on top and drizzle the dressing on top. Or serve it on the side and let everyone help themselves.
