Chicken Salad Lettuce Wraps

If you have cooked chicken on hand, these lettuce wraps are a great way to use it. Add in a few more ingredients, mix them up, and spoon the chicken salad into lettuce leaves for an easy lunch or dinner.

Ingredients

  • 3 cups seasoned cooked chicken, cubed or shredded (see note)
  • 1/2 cup mayonnaise
  • 1/4 cup blue cheese crumbles
  • 1/4 cupย  chopped walnuts
  • 1/4 chopped dried cranberries
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • Lettuce leaves (see note)

Instructions

  1. Combine all of the ingredients, except the lettuce, in a medium-sized bowl and stir until well combined.
  2. Spoon the chicken salad into the lettuce leaves for serving.

Notes

Rotisserie chicken works great, but leftover grilled or roasted chicken is great, too. This recipe also works great with roasted turkey.

I like to use butter lettuce for wraps. It’s tender and easy to wrap, but I usually double up the leaves for each wrap. Try romaine or iceberg lettuce leaves if you prefer sturdier/crisper lettuce.

You can make the chicken salad ahead of time and store it in the refrigerator. It will keep for several days. Store the lettuce leaves separately so they don’t wilt.
