Simple pita pizzas topped with chorizo, goat cheese, and fresh tomatoes. Perfect for a light dinner or appetizer.

  • 5 ounces Mexican chorizo
  • 2 pitas
  • 1/4 cup shredded Monterey jack cheese
  • 2 ounces goat cheese, crumbled
  • 2 tablespoons diced red onion
  • 8 small grape tomatoes, halved

Instructions

  1. Preheat oven to 400 degrees. Cook the chorizo in a skillet over medium heat until it’s cooked through, about five minutes or so.
  2. Place the pitas on a baking sheet. Top with the chorizo, shredded cheese, goat cheese, diced onion, and tomatoes. Bake for 10 minutes, slice, and serve!
