Easy Easter Dinner on a Sheet Pan

If you’re planning a small holiday dinner for Easter, you are going to love this easy sheet pan pineapple ham and veggies. The ham and pineapple are glazed in a sweet and tangy sauce, and all of it cooks together on a sheet pan. It’s easy to make and clean-up!

To be fair, you don’t have to wait until Easter to make this easy sheet pan dinner, but the combination of ham, potatoes, and green beans makes it the perfect dinner for the holiday if you’re not hosting a crowd.

Sheet Pan Easter Dinner

  • This is the perfect Easter ham dinner for four with a few slices of ham leftover so you still get those post-holiday sandwiches.
  • It’s super simple to make and all of it cooks one sheet pan in about 30 minutes.

I’m a fan of sheet pan dinner recipes, and making one for a holiday dinner is a dream if you’re trying to keep things simple. Simple is such a great thing.

Ingredients

  • Baby potatoes
  • Green beans
  • Olive oil
  • Minced garlic
  • Fresh thyme
  • Onion powder
  • Salt and pepper
  • Sliced quarter ham
  • Canned pineapple slices
  • Honey
  • Brown sugar
  • Apple cider vinegar
  • Dijon mustard

Assemble the Sheet Pan

Halve the potatoes and place them on the pan. Trim the green beans and place them on the sheet pan, too. Layer the slices of ham with the pineapple next to the green beans.

Season the Vegetables

In small bowl, combine:

  • Olive oil
  • Minced garlic
  • Fresh thyme
  • Onion powder
  • Salt and pepper

Pour it over the potatoes and green beans and lightly toss them so they are mostly coated.

Make the Glaze

In a small saucepan, combine:

  • Honey
  • Brown sugar
  • Apple cider vinegar
  • Dijon mustard

Bring it to a simmer and then brush it on the ham and pineapple.

Bake and Serve

Bake the ham and vegetables for about 30 minutes at 450°F or until the potatoes are fork-tender.

Recipe Tips and Variations

The recipe, as written, is potato-heavy because tender roasted potatoes are so, so good. But, you can reduce the amount and add more green beans if you like – they will still cook in the same amount of time.

Feel free to pile on the ham, too, and layer a couple of slices with one pineapple ring. Most likely, you will have leftover ham – I use a 2-pound quarter ham for this and layer quite a few pieces on the sheet pan and save the rest for sandwiches.

If your store doesn’t have quarter hams you can use two to three ham steaks and slice them.

If you don’t like green beans you can use thick asparagus (avoid the thin ones – they will overcook) or brussels sprouts (halve or quarter them).

Instead of baby potatoes, you can use red potatoes or Yukon Gold potatoes – they just need to be cut into bite-sized pieces that are roughly the same size.

Whichever potatoes you use, try sprinkling some grated Parmesan over them before serving if you like a little cheese.

Ingredients

Scale
  • 1 pound baby potatoes, cut in half
  • 1/2-pound green beans, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 3 teaspoon fresh thyme
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 quartered boneless ham, sliced (see note)
  • 1 (20-ounce) can sliced pineapple, drained
  • ¼ cup honey
  • ¼ cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard

Instructions

Preheat oven to 450°F. Spray a sheet pan with nonstick spray.

Place the potatoes on 1/3 of the pan and then the green beans right next to them in the middle. Drizzle the potatoes and green beans with oil, garlic, thyme, onion powder, salt, and pepper. Stir the potatoes then the green beans, so they get evenly coated but not mixed together.

On the last third of the pan, alternate laying down ham, then pineapple until you have used up all the ham. If your ham is sliced thin, you can double up on the ham layers, so you have two slices, then pineapple, then two slices.

In a small saucepan, combine the honey, brown sugar, vinegar, and Dijon mustard. Bring the mixture up to a simmer over medium-high heat. Brush the honey glaze over the ham and pineapple.

Bake for 25 to 30 minutes or until the potatoes are fork-tender.

Notes

Depending on the size of your quarter ham (the ones I find are usually around two pounds), you will probably have extra slices. Save them for sandwiches! You can also double up the slices on the sheet pan to use more so you have leftovers. If you can’t find quarter hams, you can use two to three ham steaks and slice them.

  2. After 15 min. 450 ham was starting to show burn burnt type on edges and dry put the potatoes and or dried everything out…is that right temp.? Turning it down.

    1. That is the right temperature but every oven is different, so it’s always good to adjust the heat if needed.
