These puff pastry bundles are easy to make and switch up with different fillings. Make them with ham and Swiss cheese, or swap them out to change the flavor. They make a great snack for parties, or pair them with a bowl of soup or a salad for an easy dinner.

Ingredients

Scale
  • 2 sheets puff pastry, thawed but still cold
  • 12 slices thin-sliced deli ham
  • 12 slices Swiss cheese
  • 3 cups arugula
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • Egg wash (1 large egg whisked with a splash of water)
  • Sesame seeds, flakey salt, or everything bagel seasoning for garnish

Instructions

  1. Preheat the oven to 425°F and line two large baking sheets with parchment paper.
  2. Unfold one of the puff pastry sheets on a lightly floured surface and roll it into a 10×12” rectangle that is approximately ⅛” thick.
  3. Cut the puff pastry into 6 even rectangles (about 4×5” each).
  4. Place a slice of ham and a slice of cheese on each rectangle.
  5. Add the arugula to a small bowl and drizzle over the olive oil and lemon juice. Massage gently until the oil evenly coats the arugula. Add ¼ cup of arugula on top of each slice of cheese.
  6. Fold two opposite corners of the puff pastry together so it encloses the filling, leaving just a little out on the top and bottom.
  7. Brush the puff pastry with the egg wash and sprinkle it with your desired garnish (sesame seeds, flakey salt, or everything bagel seasoning).
  8. Place the bundles on the prepared baking sheet and repeat steps 2 through 7 with the second sheet of puff pastry.
  9. Bake the bundles for 12 to 14 minutes, or until the puff pastry is golden brown and the cheese is melted. Serve warm from the oven.
  10. Serve immediately.

Notes

Substitutions: Instead of ham try the same amount of prosciutto. You can also swap the Swiss cheese for Gruyere, Provolone, or try crumbled goat cheese.

Dipping sauce: These bundles are delicious on their own but they are even better with honey mustard– whisk together ¼ cup Dijon mustard and ¼ cup honey in a small bowl.
