Lemon-Honey Glazed Carrots

Quick and easy honey glazed carrots brightened with a squeeze of fresh lemon juice and cooked, on the stove, with some herbs and olive oil.



  • 1 tablespoon olive oil
  • 6 medium carrots, peeled and cut into 2-inch pieces
  • 1 teaspoon Herbs de Provence
  • ½ teaspoon salt
  • 1 tablespoon honey
  • 1 teaspoon fresh lemon juice


  1. Heat the olive oil in a pan over medium heat. Add the carrots, herbs and salt. Stir the carrots around to coat them evenly in the oil and herbs. Cover the pan and let them cook, stirring occasionally, for 10-15 minutes, or until fork tender.
  2. Whisk the honey and lemon juice in a small bowl. Once the carrots are fork tender, add the lemon honey to the pan and stir to coat the carrots. Transfer to a bowl and serve.
