One Pan Creamy Spinach Meatballs and Gnocchi

Meatballs and gnocchi is an easy one-pan recipe with a creamy sundried tomato and spinach sauce, frozen meatballs, gnocchi, and Parmesan cheese. It’s a hearty and comforting dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced yellow onion
  • 1 tablespoon minced garlic
  • ยฝ cup chopped marinated sundried tomatoes, drained
  • 1 ยพ cup chicken broth (see note)
  • 1 pound frozen beef meatballs
  • 3 cups chopped fresh spinach
  • 1 pound gnocchi
  • ยผ cup heavy cream
  • ยฝ cup grated parmesan cheese, plus extra for garnish
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pan (3.5-quart) over medium heat. Add the onion and cook it for a few minutes or until itโ€™s softened.
  2. Add the garlic and sundried tomatoes and cook them with the onions for a minute.
  3. Add the chicken broth and stir. Bring the broth to a simmer and add the meatballs and chopped spinach. Cover the pan and cook the meatballs for 5 minutes.
  4. Add the gnocchi and stir so the sauce covers them. Cover the pan and simmer the gnocchi until tender, about five to eight minutes. Stir occasionally.
  5. Stir in the heavy cream. Once the sauce is bubbling, add the grated cheese and stir until smooth. If using, garnish each serving with grated Parmesan.

Notes

I use regular chicken broth for this recipe. You can use low-sodium chicken broth or substitute vegetable broth if that’s what you have on hand.

Leftovers will keep in an airtight container in the refrigerator for three to four days.
