Easy Peanut Noodles

This is one of my favorite easy take-out inspired dinners that I make on nights when I’m high-risk for ordering dinner instead of making it. It takes just 15 minutes and calls for mostly pantry ingredients all of which can be found at a regular grocery store.

  • 12 ounces spaghetti
  • 1 tablespoon sesame oil
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon oyster sauce
  • 1 tablespoon smooth peanut butter
  • 1 tablespoon ginger paste
  • 2 teaspoons sriracha sauce, or to taste
  • 4 green onions, sliced
  • 2 tablespoons sesame seeds

  1. Boil the spaghetti according to package directions. While the noodles cook, make the sauce.
  2. Stir the sesame oil, soy sauce, rice wine vinegar, oyster sauce, peanut butter, ginger paste, and red pepper flakes together in a small bowl.
  3. Once the noodles are ready, drain them and place them back in the same pot. Add the sauce to the hot noodles and stir to coat the noodles evenly. Transfer the noodles to a bowl and top them with green onions and sprinkle the sesame seeds over the top.
