These sweet potato pancakes are great for a special weekend breakfast!

Ingredients

  • 3 small sweet potatoes, peeled and cut into two inch cubes
  • 1 and 1/2 cup flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/3 cup walnuts, finely chopped
  • 2 eggs, beaten
  • 1 and 1/2 cups 2% milk
  • 1 teaspoon vanilla
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon brown sugar

Instructions

  1. Bring a large pot of water to a boil. Add the sweet potatoes and boil them for about 15 minutes, or until they are fork tender. Drain them, return them to the pot, and mash them until smooth. Set them aside.
  2. In a medium bowl mix all of the dry ingredients together. In a large bowl whisk together the eggs, milk, vanilla, butter, sugar, and the mashed sweet potatoes. Add the dry ingredients to the wet ones and stir until just combined.
  3. Heat a large non stick pan over medium heat. Spray with cooking spray and then scoop 1/4 cup of batter for the pancakes. Cook them until browned on both sides. Makes approximately 24 pancakes.
