This chicken ratatouille is a great way to use up all the summer vegetables like tomatoes, zucchini, eggplant, and peppers!

It all cooks on one sheet pan for easy clean-up!

It's similar to a classic French ratatouille but easier to make - no complicated prep steps! Just chop and cook.

Chicken breasts Dried oregano Salt and pepper Eggplant Bell pepper Zucchini Red onion Garlic Cherry tomatoes Olive oil Fresh basil

How to make it

Cut the chicken into cubes and season with the oregano, salt and pepper. Cut the eggplant into pieces, slice the peppers and zucchini. Spread them on the sheet pan.

How to make it

Add the garlic, onion, and tomatoes, drizzle the oil over the top, and sprinkle on some seasonings. Place the seasoned chicken on the sheet pan with the veggies.

How to make it

Bake for 20 to 25 minutes at 425°F. Garnish with the sliced basil leaves and serve!

How to serve it

Serve the chicken ratatouille over pasta, rice, or quinoa for a a delicious meal! The leftovers are amazing, too.
