Chile colorado is made with pork, dried chiles and a few other simple ingredients. You can make it mild or hot depending on the type of chiles you use. Serve it served over rice or with tortillas.

INGREDIENTS
dried red chiles vegetable oil pork shoulder coarse salt onion & garlic oregano & cumin chicken stock black pepper lime juice
Soak the Chiles

Remove the stems and seeds. Soak the chiles for 30 minutes in water to soften them.
Make the Sauce

Puree the softened chile peppers with water, onion, garlic, salt, oregano, and cumin until smooth.
Brown the Pork

Heat the oil in a large pan over medium-high heat. Brown the pork on all sides. This may need to be done in batches.

Strain the chile sauce through a fine mesh sieve into the pan. This will remove any solids from the sauce.

Add the chicken stock, stir, and bring a boil. Reduce the heat and simmer the chile until thickened and the pork is tender. About 60-90 minutes.
