Simmering: The ingredients simmer until the flavors are developed. Pureeing: The soup is blended to make it extra creamy!

ingredients

Acorn Squash * Olive Oil * Onion * Garlic * Dried Herbs * Salt & Pepper * Veggie Broth * Parsley * Apple Cider Vinegar * Cream

Roasted acorn squash

Slice the squash and remove the seeds.

Coat them with oil and roast until tender.

Slice the squash

Slice the roasted squash into wedges and then remove the peels.

SIMMER THE SOUP

Sauté the veggies in a large pot with oil. Add the broth and simmer the soup for 10 minutes.

PUREE THE SOUP

Add the parsley and puree the soup until smooth. Stir in the cream and it's ready to serve!

GARNISHES

Add some shredded Parm, parsley, and a swirl of cream to dress it up.
