Using bone-in chicken with the skin adds tons of flavor to this soup! Brown it first in a large pot.

BROWN THE CHICKEN

Take the chicken out and add the veggies. Cook them and scrape up the browned bits off the bottom of the pan.

Saute the vegetables

Add the seasonings and pour the broth into the pan.

Place the chicken breast in the broth and bring the pot to a strong simmer. Simmer the soup for 20 minutes.
