Place the prepped peppers in a heat-proof bowl, cover with plastic wrap and microwave them for about 5 minutes. This will soften them so they are perfectly cook after you bake them!

Boil the stock, lime juice, and seasonings. Add the rice and cook until the liquid is absorbed - about five minutes. Add the shredded chicken and cilantro.

Stuff the peppers with the chicken and rice mixture.  Place them in a baking dish. Top with the enchilada sauce and cheese!
