Place the diced strawberries in a bowl. Add the sugar, vanilla, and salt and stir. Set the strawberries aside.
Bring the water to a boil over high heat. Once it’s boiling, add the oats, stir, and lower the heat to medium. Cook the oats, stirring occasionally, for 10 minutes or until most of the water is absorbed.
Add the strawberries and cream to the oatmeal and stir. Cook the oatmeal for 30 seconds to a minute or until the cream and strawberries are warmed through.
Divide the oatmeal among two bowls and drizzle a teaspoon of cream over each serving. Garnish each with chopped almonds if using.

Make-ahead tip: If you want to save time in the morning, prepare the strawberries the night before. Chop and toss them with the sugar, store them in an airtight container, and keep them in the fridge. They'll be even saucier the next morning when you're ready to make the oatmeal.
