Cold, fizzy, and so refreshing - these watermelon mojitos are a twist on the classic Cuban drink. Made with fresh watermelon juice, rum, mint, and Iime juice it's a great drink for a warm summer night.
Tear the mint leaves in half and divide them between two glasses. Divide the sugar and lime juice between each glass (juice of 1/2 a lime per glass).
Using a muddler (or handle of a wooden spoon) crush the mint leaves with the sugar and lime juice. Add ice to each glass.
Add the rum and pour the watermelon juice through a fine-mesh strainer into each glass (1/4 cup each).
Top the drink off with soda water, stir, and garnish with fresh mint and/or lime slices and serve.
Notes
For the watermelon juice, puree fresh watermelon chunks in a blender. Pour the puree through a fine-mesh strainer into a measuring cup. I like to strain the juice a second time when I add to the drinks, which will reduce foaminess and make for a prettier drink. I've seen watermelon juice at the store, and it will work in these drinks if you're short on time. Just check the ingredients. If it's already sweetened, you might want to omit the added sugar in the recipe and just muddle the mint with the lime juice. Otherwise, the drink might be too sweet.
