Baked Italian Sausage Gnocchi

This Italian sausage gnocchi bake is so hearty and comforting. Brown the sausage, make the sauce, add the gnocchi, and bake it all in the oven for a cozy dinner.

Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup spinach, roughly chopped
  • 24 oz gnocchi
  • 1/2 cup Parmesan cheese, grated
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F. Slightly spray a 9×13″ baking dish with cooking spray.
  2. Heat the olive oil over medium heat in a large skillet. Add the Italian sausage and cook, breaking it apart, until browned. Remove the sausage and set it aside.
  3. Combine the diced onion and minced garlic in the same skillet. Cook them until the onion is translucent.
  4. Add the diced tomatoes, 1 cup heavy cream, 1 teaspoon Italian seasoning,  1/2 teaspoon salt, and 1/4 teaspoon pepper. Stir and bring to a simmer.
  5. Stir in the chopped spinach and cook it until it wilts.
  6. Stir in the cooked sausage and gnocchi. Mix until everything is coated in the sauce. Transfer the mixture to a baking dish. Sprinkle 1/2 cup of Parmesan cheese over the top.
  7. Bake the sausage and gnocchi for 20 to 25 minutes or until the gnocchi is tender and the top is golden and bubbly. Garnish with fresh basil before serving.

Notes

Make Ahead: You can assemble it a day ahead, cover the baking dish with plastic wrap, and keep it in the refrigerator until you’re ready to bake it.

Leftovers: Store the leftovers in an airtight container in the refrigerator for three to four days. You can also freeze the leftovers for up to two months.
