Oatmeal Raisin Cookies with Chocolate Chips

These oatmeal raisin cookies have a wonderful texture – the raisins and chocolate chips are optional, but I don’t recommend leaving them out!

Ingredients

  • 1 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/4 cups old-fashioned rolled oats
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/3 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large eggs
  • 1/2 teaspoon vanilla extract
  • 3/4 cups raisins
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Whisk the first six ingredients together in a medium-sized bowl.
  2. In a separate large bowl or stand mixer, cream the butter and sugars together until light and fluffy (be sure to scrape the bowl at least once). Add the egg and vanilla and continue mixing until well incorporated.
  3. Add the dry ingredients to the wet ones, in few batches at a time, and mix until the dough comes together either by hand with a spatula or on a low mixer setting. Fold in the raisins and chocolate chips.
  4. Cover the bowl with plastic wrap and stick it in the fridge for thirty minutes to chill.
  5. Scoop a generous tablespoon of cookie batter and drop it onto a cookie sheet lined with parchment. Place the cookies an inch or so apart. Bake at 350 degrees for 10-12 minutes. Let the cookies cool for a few minutes on the pan before transferring to a wire rack.
