This recipe is a fun twist on traditional quesadillas, plus it’s easy to make. Flour tortillas filled with chicken, bacon, cheddar cheese, green onions, and a drizzle of ranch – it’s a flavor combo that’s hard to resist.
Place tortillas on a baking sheet. Take half of the cheese and divide it evenly on one side of each open tortilla. Sprinkle the bacon over the top of the cheese and then layer on the chicken.
Drizzle a tablespoon of dressing over the chicken on each tortilla and sprinkle the green onion over the top. Sprinkle the rest of the cheese on top of each quesadilla.
Fold the tortillas over and lightly press them so they stay closed. Preheat the broiler to 500°F and move an oven rack so it’s 5 to 6” below the broiler.
Broil the quesadillas on one side until crispy and golden in spots. This will only take a couple of minutes, so keep an eye on them. Flip them over and broil them on the other side until crispy.
Slice each quesadilla in half and serve with ranch on the side for dipping.
