Bright and fresh black bean lettuce wraps with bell pepper, chili seasonings, cilantro, and lime juice. Make the filling ahead and it's ready for an easy lunch or dinner. Just add some lettuce leaves to wrap up the delicious filling.
Lettuce leaves (I like butter lettuce or romaine)for serving
Instructions
Combine all of the ingredients (except the lettuce) in a large bowl. Refrigerate the black bean filling for at least a couple of hours. Give the filling a taste after it's chilled and add more salt if you think it needs it.
Spoon the filling into the lettuce leaves for serving.
Notes
Optional toppings and garnishes: You can dress the lettuce wraps up with some sour cream and salsa. Sometimes I make a quick sauce with a few spoonfuls of sour cream, chopped cilantro and enough lime juice so the sauce is easy to drizzle over the filling.Storage: The black bean filling will keep in an airtight container in the refrigerator for several days. If you are making the wraps for meal prep, keep the lettuce leaves separated until you're ready to serve the wraps.
