Crab Salad Sandwich
This sandwich is simple because it's mostly about the bread, so use the best crusty loaf you can find. If crab isn't your thing, substitute chicken or tuna - it all works well.

Ingredients

lump crab meat
1/4
cup
mayonnaise

small rib of celery
finely diced
A squeeze of fresh lemon juice

teaspoon
chopped dill

teaspoon
chopped parsley
a couple pinches of salt and pepper
1/2
cup
baby arugula
2
slices
of bread
Instructions
Mix the crab with the mayo, lemon, herbs, salt, and pepper until just combined. Divide between two sandwiches and pile on the arugula.
