This easy pizza sandwich is like a mini party sub made for sharing. Toasted until golden with plenty of melted cheese and your favorite toppings, it’s the perfect crowd-pleasing snack or casual dinner.
1(12") loaf of soft Italian breadsliced crosswise in half
2tablespoonsolive oil
3slicesprovolone cheese
3ouncesGenoa salami slices
2ouncespepperoni slices
1/2tablespoonfresh herbsthyme, parsley, basil or combination
1/4cupsliced Kalamata olives
1/2mediumgreen peppercut into strips
1/3cupmarinara sauce
6ouncesfresh mozzarella
Instructions
Preheat the broiler to high (500°F). Place the sliced bread open-faced on a baking sheet.
Starting with the olive oil, drizzle or brush it over both slices of bread. Layer the provolone cheese and meat on the bottom slice. Sprinkle the herbs over both slices of bread.
Layer the olives, green peppers, marinara sauce, and mozzarella cheese on top of the meat.
Stick the sandwich under the broiler. Keep an eye on it and rotate the baking sheet, if necessary, to ensure the cheese melts evenly. Broil just until the bread is toasted and the mozzarella has melted.
Place the top sliced bread on top of the bottom one and, using a serrated knife, slice into four sandwiches. Serve hot.
