For the Dressing

Zest of one lime
⅓ cup fresh lime juice
½ cup olive oil
1 tablespoon honey
1 teaspoon salt
¼ teaspoon ground cayenne pepper
¼ teaspoon garlic powder

For the Salad

2 (15-ounce) cans of black beans, rinsed and drained
1 ½ cups corn kernels (fresh or frozen)
1 red bell pepper, diced
6 green onions, thinly sliced
½ cup chopped fresh cilantro

Instructions

Place all of the dressing ingredients in a small bowl and whisk to combine, set aside.
Place the salad ingredients in a large bowl and gently toss to combine.
Pour the dressing over the salad and toss again. Refrigerate the salad until you’re ready to serve it.
