Buffalo Chicken Meatballs

Buffalo chicken meatballs are a great appetizer recipe with the same flavor as the classic wings but easier to make and less messy.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup bread crumbs
  • 1/3 cup onion, minced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 large egg
  • 2 ounces hot sauce, such as Frank’s, divided
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 400 degrees.  In a large mixing bowl, combine chicken, bread crumbs, onion, garlic powder, onion powder, egg, and 2 tablespoons of hot sauce.
  2. Form the mixture into two-inch meatballs. Place them on a baking sheet lined with parchment paper.  Drizzle the oil over the top. Bake them for 18-20 minutes.  
  3. While meatballs are baking, prepare the sauce by combining the remainder of hot sauce and butter in microwave safe dish.  Cover the bowl with a paper towel or plastic wrap and microwave the sauce for 30 seconds.  Stir or whisk until butter has completely melted. 
  4. Remove meatballs from the oven and place meatballs in a mixing bowl and toss them with the sauce.  Serve with blue cheese dip or Ranch dressing, celery, and carrots.
