Description
Buffalo chicken meatballs are a great appetizer recipe with the same flavor as the classic wings but easier to make and less messy.

- 1 pound ground chicken
- 1/2 cup bread crumbs
- 1/3 cup onion, minced
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 large egg
- 2 ounces hot sauce, such as Frank’s, divided
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter
Instructions
- Preheat oven to 400 degrees. In a large mixing bowl, combine chicken, bread crumbs, onion, garlic powder, onion powder, egg, and 2 tablespoons of hot sauce.
- Form the mixture into two-inch meatballs. Place them on a baking sheet lined with parchment paper. Drizzle the oil over the top. Bake them for 18-20 minutes.
- While meatballs are baking, prepare the sauce by combining the remainder of hot sauce and butter in microwave safe dish. Cover the bowl with a paper towel or plastic wrap and microwave the sauce for 30 seconds. Stir or whisk until butter has completely melted.
- Remove meatballs from the oven and place meatballs in a mixing bowl and toss them with the sauce. Serve with blue cheese dip or Ranch dressing, celery, and carrots.
