Buffalo chicken meatballs are a great appetizer recipe with the same flavor as the classic wings but easier to make and less messy.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup bread crumbs
  • 1/3 cup onion, minced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 large egg
  • 2 ounces hot sauce, such as Frankโ€™s, divided
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 400ยฐF.ย  In a large mixing bowl, combine chicken, bread crumbs, onion, garlic powder, onion powder, egg, and 2 tablespoons of hot sauce.
  2. Form the mixture into two-inch meatballs. Place them on a baking sheet lined with parchment paper.ย  Drizzle the oil over the top. Bake them for 18-20 minutes.ย ย 
  3. While the meatballs are baking, prepare the sauce by combining the remainder of the hot sauce and butter in a microwave-safe dish. Cover the bowl with a paper towel or plastic wrap, and microwave the sauce for 30 seconds. Stir or whisk until the butter has completely melted.ย 
  4. Remove the meatballs from the oven, place them in a mixing bowl, and toss them with the sauce. Serve with blue cheese dip or Ranch dressing, celery, and carrots.
