The weather was hot, hot, hot yesterday leading me to the conclusion that the ‘dog days’ of summer are upon us, at least until the monsoon season starts. The temperature hit 100 degrees early in the day and held strong most of the evening, which kept us from using the grill and dining ‘al fresco’. Bacon cheeseburgers were on the menu for dinner, so I wasn’t too upset about not using the outdoor grill since I have always preferred my hamburgers pan fried. Don’t get me wrong, there is nothing wrong with grilling hamburgers, but in my experience I have discovered that burgers are juicier when fried in a cast iron skillet.
 
I love experimenting with hamburgers because the flavor possibilities are endless. Usually, I get creative and incorporate different ingredients in the patty, but this time I kept the patty simple and focused on creating a spicy green chile mayo. Green chile is very popular in our neck of the woods and many restaurants boast a green chile cheeseburger on their menus. Instead of just layering green chili on the patty I decided to concoct a mayo. I didn’t do any research on it, but I’m pretty sure I’m not the first to think of it. I’m sure if you googled “green chile mayo” you’d get a lot of hits. So here’s one more version to add to the mix…

Bacon Cheeseburgers with Green Chile Mayo

Description

Simple hamburgers dressed up with bacon, cheese, and a creamy green chile mayo with cilantro and lime.


Scale

Ingredients

  • 1/2 cup mayo
  • 4 oz can diced green chile
  • 1 tablespoon fresh cilantro, chopped
  • Juice from 1 lime
  • 1 lb ground beef
  • salt
  • pepper
  • 4 slices bacon
  • 4 slices Havarti cheese
  • 4 hamburger buns

Instructions

  1. Mix the mayo, green chile, cilantro and lime in a medium bowl until combined. Chill until the hamburgers are cooked.
  2. Divide the beef into four equal parts. Form the patties and season each with salt and pepper on each side.
  3. Cook the bacon in a large skillet over medium heat until crispy. Remove from the pan reserving the fat. Cook the patties in the same pan, about 4-5 minutes on each side. Add the cheese at the end and cook a minute or so until it’s melted. Serve the cheeseburgers on buns with the bacon and mayo.

Notes

Nutrition information does not include the hamburger buns since calories vary widely depending on the type and brand you like, so be sure to add those calories if you track this sort of thing.
