Tortilla Taco Pie

This Tortilla Taco Pie recipe is a 30-minute dinner with layers of flour tortillas, taco meat, cheese, and beans. It’s a fun twist on tacos and so easy to make.

Wholesome dinner idea for you today! If you love taco night, you’ll love this easy taco pie recipe with layers of taco fillings. It’s an easy recipe that doesn’t have a ton of prep work – just make the taco meat and layer it with tortillas, cheese, and beans. Into the oven it goes until the cheesy is melty, and then slice and serve!

Add some chips and salsa on the side (some guacamole wouldn’t hurt, either!), and you get a comforting weeknight dinner.

Ingredients

  • Olive oil
  • Lean ground beef or ground turkey
  • Taco seasoning
  • Salsa
  • Flour tortillas
  • Refried black beans
  • Shredded cheddar cheese
  • Sour cream
  • Lime juice
  • Chopped fresh cilantro for garnish

How to Make It

Make the meat mixture: Brown the ground beef in a large skillet with olive oil. Add the taco seasoning and salsa. Stir and then take the pan off the heat.

Assemble the taco pie: Spread some salsa in the bottom of the pie plate, or you can use a round cake pan. Spread 1/4 cup of the refried beans on a tortilla and place it in the pan bean side up. Spread some taco meat over the top and add some cheese. Repeat this process with the rest of the tortillas.

Bake: Place the pan in the oven and bake the tortilla pie for 10 to 15 minutes at 375°F.

Garnish: Mix the sour cream with lime juice in a small bowl. Drizzle the sauce over the top of the taco pie and sprinkle some cilantro on top. Slice the pie into four pieces for serving.

Recipe Tips

  • Feel free to change up or add your favorite taco fillings – swap the cheese, add some veggies, use ground turkey instead of beef, switch up the salsa… you get the idea.
  • You can also add other toppings like shredded lettuce, diced tomatoes, avocado, and black olives.
  • Leftover taco pie will keep well in the refrigerator for several days. Store it in an airtight container and warm up the slices in the microwave, oven, or air fryer.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 packet taco seasoning (1 oz)
  • 2/3 cups salsa, divided
  • 4 (8-inch) flour tortillas
  • 1 cup refried black beans
  • 1 ½ cups shredded cheddar cheese
  • 2 tablespoons sour cream
  • Juice of ½ a lime
  • 1 tablespoon chopped cilantro, optional

Instructions

  1. Preheat the oven to 375°F.
  2. Heat the oil in a large non-stick pan over medium heat. Add the beef and brown it, breaking it apart as it cooks. Once the beef is browned, add the taco seasoning and 1/3 cup of salsa. Stir and cook the beef for a couple of minutes. Take the pan off the heat.
  3. Spread 1/3 cup of salsa in a 9” pie pan. Spread ¼ cup of beans on a tortilla and place it bean-side up in the pie dish. Spread a generous ½ cup of the ground beef mixture on top of the beans and sprinkle ¼ cup of cheese over the top. Repeat with the rest of the tortillas finishing with a layer of beans, beef, and cheese on top of the tortilla pie.
  4. Bake the taco pie for 10 to 15 minutes or until it’s warmed through and the cheese is melted on top.
  5. While it bakes, mix the sour cream and lime juice in a small bowl. Once the taco pie is done baking, drizzle the sour cream sauce over the top. Sprinkle cilantro over the top if using. Slice into four pieces for serving.
