This chicken salad recipe is packed full of fresh flavor with the addition of two different kinds of herbs – fresh parsley and dill. It’s a great way to use up leftover cooked chicken and has the right amount of creamy mayo to bring it all together. Toast up some bagels and you get the best chicken salad bagel sandwich.

I love this sandwich with potato chips, garlic fries, or a bowl of tomato soup, which is ready in ten minutes. Make this chicken salad it for lunch or dinner – you’re going to love it!

Ingredients

  • Diced cooked chicken breast or shredded rotisserie chicken
  • Diced celery
  • Fresh parsley
  • Fresh dill
  • Mayonnaise
  • Kosher salt
  • Black pepper

How to Make It

Place all of the ingredients in a bowl, mix, and pile the chicken salad on toasted bagels. Add sliced tomatoes, lettuce, and sliced red onions if desired.

Store the chicken salad in an airtight container and it will keep in the refrigerator for three to four days.

Ingredients

For the Chicken Salad

  • 1 cup diced cooked chicken breast or shredded rotisserie chicken
  • 1/4 cup diced celery (about one small rib)
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped dill
  • 1/4 cup mayonnaise
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the Sandwiches

  • Sliced red onion
  • Lettuce
  • Toasted bagels

Instructions

  1. Mix all of the ingredients for the salad together in a medium bowl.
  2. Divide the salad between two bagels and top with the onion and lettuce.
