Deep Dish Chocolate Chunk Cookie for Two

Crisp edges, soft center, and melty chocolate in every bite – this deep dish cookie for two is dangerously easy.

Thereโ€™s nothing better than a warm, melty chocolate chunk cookie straight from the oven – and this one is made just for two. It bakes up soft in the center, lightly golden at the edges, and basically begs for a scoop of vanilla ice cream on top. Iโ€™ve been making it on repeat lately, and I have a feeling youโ€™ll be doing the same.

Ingredients

  • Butter: I like to melt the butter first because, one, it’s easier than dealing with softened butter and, two, it helps develop a chewy cookie texture.
  • Brown sugar: This adds moisture so the cookie has a soft center.
  • Granulated sugar: A little bit helps crisp up the edges.
  • Egg yolk: Separate the egg and use just the yolk so the cookie is tender without being cakey.
  • Baking powder: You only need a little bit to give the cookie some lift while it bakes so it’s not too dense.
  • Chopped chocolate: I’ve tried with chocolate chips and it works fine, but chopped chocolate melts better so you end up with glossy pools of chocolate in every bite.
  • Vanilla extract
  • All-purpose flour

How to Make It

  1. Melt the butter in a small microwave-safe bowl.
  2. Mix in the sugars, vanilla, yolk, vanilla, baking powder, and flour. Add the chocolate and stir.
  3. Press the dough into the prepared baking dish. I like to add a few chocolate pieces on top of the dough.
  4. Bake the cookie at 350ยฐF for about 20 minutes or so. Dig in while it’s still warm!

Serving it with a scoop of vanilla ice cream on top is optional, but highly recommended.

Ingredients

  • 2 tablespoons butter
  • ยผ cup brown sugar packed
  • 1 tablespoon granulated sugar
  • 1 large egg yolk
  • ยฝ teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • ยผ teaspoon baking powder
  • 1 ounce chopped chocolate
  • vanilla ice cream for serving

Instructions

  • Preheat the oven to 350ยฐF. Lightly coat a 6-inch baking dish with cooking spray.
  • Place 2 tablespoons of butter in a small microwave-safe mixing bowl. Melt it in the microwave for 30 seconds, stir and warm it again for 10 to 20 seconds or until melted.
  • Add ยผ cup brown sugar and 1 tablespoon of granulated sugar to the melted butter and stir. Mix in the egg yolk and vanilla extract.
  • Add 1/3 cup of flour and 1/4 teaspoon baking powder. Stir until the dough is well combined. Mix in almost all of the chocolate chunks, reserving a few bigger pieces for the top of the cookie.
  • Transfer the cookie dough to the prepared baking dish. Lightly press it into the dish and then press the remaining chocolate chunks on top.
  • Bake the cookie for 20 to 23 minutes or until itโ€™s lightly golden on top and beginning to pull away from the sides of the baking dish.
  • Cool the cookie for five minutes before serving it warm with vanilla ice cream.

Notes

If you are using unsalted butter, add a pinch of salt when you add the flour.
I use chopped dark chocolate or you can try milk chocolate. You can also use chocolate chips.
I recommend checking the cookie once it’s baked for 20 minutes. You want it to be just set in the middle and starting to pull away from the sides of the pan. If it hasn’t reached this stage, keep baking it checking every minute or so until it’s done. I like to let it cool for a few minutes in the pan.
You can prepare the cookie dough ahead, press it into the pan, and refrigerate it until you’re ready to bake the cookie. Let it warm up at room temperature for 10 minutes or so before baking it.
