Cowboy Caviar Guacamole

Cowboy caviar combined with creamy guacamole is a quick and easy dip recipe loaded with fresh flavors. It has avocado, beans, corn, peppers, tomatoes, and fresh lime juice all mixed up and ready for a big bowl of tortilla chips to go with it.

I love a recipe mash-up and this combination is a winner. Each on their own are delicious but when you combine a classic cowboy caviar (or Texas caviar as it’s sometimes called) and guac you get a terrific twofer appetizer. Add a few friends, a few margarita spritzers, and you have the makings for a great weeknight happy hour or Saturday afternoon get-together.

Ingredients

  • Avocados
  • Canned black beans drained and rinsed
  • Corn – fresh corn, frozen corn, or canned corn all work!
  • Diced Roma tomatoes
  • Diced red onion
  • Thinly sliced jalapeno peppers
  • Finely chopped cilantro
  • Fresh lime juice
  • Garlic salt

Other add-ins: This is a great “choose your own adventure” recipe because you can add or sub different ingredients. Try diced red bell pepper, chopped garlic, or stir in some crumbled cooked bacon. Add your favorite hot sauce for more heat. You can also swap the black beans for pinto beans.

How to Make It

Mash the avocados in a large bowl.

Add the veggies, beans, lime juice, and seasoning to the bowl and stir.

Give it a taste and add more salt or lime juice if needed.

Refrigerate the dip until you’re ready to serve it.

Make Ahead Tips

If you want to make it ahead, mix everything except the avocado and keep it in the refrigerator up to a day in advance. Before you serve it, mash the avocado and stir it all up.

Storage Tips

Store the dip in an airtight container in the refrigerator. The lime juice will help slow down the avocado browning, but it’s best to enjoy this snack within a day or so.

Ingredients

  • 6 large avocados
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can corn, drained and rinsed
  • 3 Roma tomatoes, seeded and diced
  • 1/2 large red onion, diced
  • 2 jalapeños, thinly sliced
  • 1/4 cup finely chopped cilantro
  • 23 tablespoons fresh lime juice
  • 1/2 teaspoon garlic salt

Instructions

  1. Scoop out the flesh of the avocado and place in a large bowl, mash well.
  2. Combine the remaining ingredients with the avocado and toss to combine. Taste for additional salt or lime juice and add more if needed.
  3. Refrigerate until ready to serve. Serve with tortilla chips.

Notes

Storage Tip: Keep the dip in a glass container that has a lid and place a piece of plastic wrap directly on the top of the guacamole to prevent browning. Place the lid on the container and refrigerate the dip for up to 3 days.
