Green Chile Turkey Melt Sliders

Green chile meets turkey in these easy 5 ingredient sliders! These baked sliders are the perfect recipe to use up leftover Thanksgiving turkey. Everything bakes together on soft Hawaiian rolls until the cheese is bubbling and the tops are lightly toasted. Theyโ€™re so simple and exactly what we all need heading into a long holiday weekend.

If you’re cooking a Thanksgiving turkey this year, chances are you’ll have some leftovers – and youโ€™ll want something delicious (and easy) to make with them. Say hello to one of my favorite ideas: green chile turkey melt sliders. Theyโ€™re made with just five ingredients, take about 10 minutes to prep, and only need a quick trip under the broiler. Thatโ€™s all it takes to turn leftover turkey into cheesy, melty, irresistible sliders.

Ingredients

  • Leftover turkey: No turkey? No problem. Leftover chicken or rotisserie chicken works just as well.
  • Hawaiian rolls: Soft, slightly sweet, and perfect for pull-apart sliders.
  • Crumbled bacon: Cook your own or do what I do – use a package of cooked, crumbled bacon to keep things easy.
  • Green chile: Canned or jarred both work. Choose mild or hot depending on your spice preference.
  • Shredded pepper jack cheese: Adds a little kick. You can swap in shredded cheddar if thatโ€™s what you have.

How to Make Turkey Melt Sliders

โ˜‘๏ธ Slice the Slider Rolls

Slice the Hawaiian rolls in half crosswise so you have one big bottom piece and one big top piece. Keep the rolls attached โ€” it makes assembly so much easier. Use a serrated knife and a gentle sawing motion to get a clean cut without squishing the rolls.

โ˜‘๏ธ Layer the Ingredients

Place the bottom roll piece on a sheet pan. I like to line it with parchment paper so clean up is easy.

Layer the turkey, bacon, green chile, and shredded cheese over the bottom half of the rolls. Make sure everything is spread evenly so every slider gets a little bit of everything.

Place the sheet pan under the broiler and broil at 500ยฐF until the cheese is melted and lightly golden in spots. Keep a close eye on it – the cheese melts fast.

When the cheese is melted, turn off the broiler. Add the top half of the rolls and leave the pan in the warm oven for a minute or two so the tops can warm through. Once the rolls are warm, remove the pan from the oven.

Use the serrated knife again to slice the warm rolls into individual sliders. Use that sawing motion again so you don’t squish the sliders as you slice them.

Green Chile Turkey Melt Sliders

These easy green chile turkey melt sliders are one of the best ways to use leftover roast turkey. Green chile, bacon, turkey, and cheese are layered on soft slider rolls and broiled until hot and cheesy.

Ingredients

  • 1 package Hawaiian rolls sliced in half crosswise
  • 8 ounces roasted turkey chopped
  • 1/2 cup crumbled bacon
  • 1/2 cup green chile
  • 1 cup shredded pepper jack cheese

Instructions

  • Move an oven rack to the top part of the oven. Preheat the broiler to high (500ยฐF).
  • Slice the Hawaiian rolls crosswise so you have a bottom piece and top piece. Place the bottom piece on a sheet pan.
  • Top the bread with the chopped turkey. Sprinkle the crumbled bacon over the top. Spoon the green chile over the top in an even layer. Sprinkle the cheese on top.
  • Place the sheet pan under the broiler. Broil the cheese until it's melted. This won't take long, so keep an eye on it.
  • Take the pan out of the oven and turn the broiler off. Place the top piece of the Hawaiian rolls on top to finish the sandwiches. If you want to warm the top buns, place the sheet pan back in the oven for a few minutes. The residual heat will warm up the buns.
  • Slice into sandwiches uses a serrated knife. Use a sawing motion so you don't squish the sandwiches as you're cutting them.

Notes

If you don’t have leftover roast turkey, you can use leftover chicken, rotisserie chicken, or turkey lunch meat.
If you have leftover sandwiches, they will keep in the refrigerator for a few days. Store them in a large resealable bag or airtight container. The sliders delicious cold or you can warm them in the microwave.
