Balsamic-Tomato Avocado Toast

More than any other time of year, winter is when I crave avocado toast. It’s a feel-good way to start the day; the variations are endless. One of those many versions is this balsamic-tomato avocado toast – it’s one of my faves, and I make it on repeat when I need a little morning boost.

It’s an Italian-themed toast with a smear of mascarpone cheese, creamy slices of avocado, and sliced tomatoes. It ends with a drizzle of balsamic glaze, which ties everything together. It’s light and fresh, not to mention easy to make.

Ingredients

  • Bread: Use your favorite kind of bread – pretty much anything goes! It’s great with crusty Italian bread, tangy sourdough, whole wheat, or just a plain Jane slice of white bread. I also love to use Ezekiel bread.
  • Cheese: You can swap the mascarpone cheese for cream cheese or ricotta or leave it out if you want to skip the cheese.
  • Tomatoes: I like Roma tomatoes because they’re meatier, but use your favorite. Sometimes, I use cherry or grape tomatoes – halve and layer them on the toast.
  • Herbs: I usually have fresh parsley, so it’s my go-to. Fresh basil is also delicious, giving the toast a Caprese salad vibe.
  • Balsamic: Balsamic glaze is just balsamic vinegar cooked down until it’s thick and drizzly – it pulls it all together with a sweet and tangy richness.
  • Optional extras: A sprinkle of ground black pepper, a small drizzle of extra virgin olive oil, or a sprinkle of red pepper flakes for heat are all good additions.

It’s a quick 10-minute assembly operation: Toast the bread, slather on the cheese, layer on the tomatoes and avocado, and finish with a drizzle of glaze. So easy! So delicious.

Ingredients

  • 1 slice whole-grain bread toasted
  • 2 tablespoons mascarpone cheese
  • 2 slices of tomato
  • 1/2 avocado sliced
  • 1 tablespoon balsamic glaze
  • A pinch of salt and sprinkling of chopped parsley optional

Instructions

  • Spread the mascarpone cheese on top of the toast.
  • Top with sliced tomatoes and avocado, and drizzle the balsamic glaze over the top. Garnish with the salt and parsley.

Notes

Mascarpone cheese: This is a type of creamy Italian cheese. It’s similar to cream cheese, but it’s not tangy. It has a rich and milky flavor – perfect for spreading on toast. I usually find it near the deli section at the grocery store with other specialty cheeses.
Balsamic glaze: Most grocery stores carry balsamic glaze – it’s usually near the balsamic vinegar section or pesto and other Italian sauces. If you can’t find it, you can simmer balsamic vinegar until it reduces to a thick sauce.
