Chicken Meatball Tzatziki Bowls

These tzatziki bowls are loaded with fresh Mediterranean-inspired flavors. They combine lemon-dill chicken meatballs, cucumbers, tomatoes, creamy tzatziki sauce, and crumbled feta cheese served over rice for a light and delicious dinner.

A while back, I shared an easy chicken meatball recipe with lemon and dill, and today, we’ve got a delicious way to use them: chicken tzatziki bowls!

I love Greek chicken bowls because it combines different textures, flavors, and temperatures in one bowl. You get warm chicken meatballs, cool and creamy tzatziki, crunchy cucumber, and juicy tomatoes. It all works, especially if you love Mediterranean flavors, as I do. This is the sort of dinner I never get tired of and make on repeat. I think you will love it, too.

Ingredients

  • Lemon-dill chicken meatballs: I like to make a batch ahead and freeze it so I can use the meatballs for easy dinners like these tzatziki bowls. However, you don’t have to make them aheadโ€”they’re pretty easy to pull together.
  • Rice: For these bowls, use your favorite kind of rice. I use instant white or brown rice to keep it easy.
  • Tzatziki sauce: I have an excellent recipe for homemade tzatziki sauce, but you can buy it already made at the store. It’s usually with other specialty food items near the produce.
  • English cucumber and grape tomatoes (or cherry tomatoes)
  • Crumbled feta cheese
  • Fresh lemon juice for garnish

How to Make the Recipe

I like to make the meatballs first and put them in the oven. While they bake (it takes about 20 minutes), you can prepare the rest of the ingredients for the bowls. Or, if you like to plan, you can make and bake the meatballs ahead and reheat them when you’re ready to make the bowls.

Ingredients

  • ยผ plain breadcrumbs
  • 1 large egg
  • 1 teaspoon chopped fresh dill, plus extra for garnish
  • 1 teaspoon lemon zest
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ยฝ teaspoon kosher salt
  • ยฝ teaspoon ground black pepper
  • 1 pound ground chicken
  • 4 cups cooked rice
  • 1 English cucumber, diced
  • 8 ounces grape tomatoes, halved
  • 1/2 cup tzatziki sauce, plus extra for serving
  • ยฝ cup crumbled feta cheese
  • Juice of half a lemon

Instructions

  1. Preheat the oven to 375ยฐF. Line a baking sheet with parchment paper.
  2. Mix the breadcrumbs, egg, dill, lemon zest, onion powder, garlic powder, salt, and pepper in a large bowl. Add the ground chicken and mix until well combined.
  3. Scoop ยผ cup of the chicken mixture to form each meatball. Place them on the prepared sheet pan.
  4. Bake the meatballs for 20 to 25 minutes or until the internal temperature of each meatball is 165ยฐF.
  5. For serving, place the cooked rice in bowls. Add the cucumber and tomatoes, and place a scoop of tzatziki in the bowl. Squeeze the lemon juice over the top and sprinkle fresh dill and feta cheese for garnish.

Notes

Make-Ahead Tips: You can make and bake the meatballs ahead. They’ll keep in the refrigerator for several days, or you can freeze them for several months.
