Baked Chicken Meatballs with Lemon and Dill

Baked chicken meatballs flavored with lemon and dill are easy to make and can be served in many ways. Pair them with pasta, rice, and potatoes, or use them to make sandwiches. Plus, they’re freezer-friendly, so you can make them ahead for easy dinners.

Easy Chicken Meatballs

I love a great meatball recipe, especially an easy one, and these lemon-dill meatballs check that box, plus more. There’s very little prep involved, the meatballs are baked instead of fried, and they’re great for meal prep if you’re looking to stock the freezer with some easy dinners for later.

They’re also a little unexpected. Ground chicken takes the place of ground beef, and the lemon and dill flavors are fresh and bright, so the overall vibe is light and flavorful. They also happen to go with many things, so we definitely need to add “versatile” to the list of reasons we should all make a batch soon.

Ingredients

  • Ground chicken – You could also use ground turkey instead of chicken.
  • Plain breadcrumbs – I like plain ones instead of seasoned so the lemon and dill flavors really shine through once the meatballs are baked.
  • Large egg
  • Chopped fresh dill – Fresh is best, but you can use dried dill. Reduce the amount to about 1/3 teaspoon if you use it.
  • Lemon zest
  • Onion powder
  • Garlic powder
  • Kosher salt and black pepper

How to Make Them

All you need is a bowl and a sheet pan for this recipe. I like to use a cookie scoop to form the meatballs – that way, they’re all the same size and cook evenly.

  • ยผ plain breadcrumbs
  • 1 large egg
  • 1 teaspoon chopped fresh dill, plus extra for garnish
  • 1 teaspoon lemon zest
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ยฝ teaspoon kosher salt
  • ยฝ teaspoon ground black pepper
  • 1 pound ground chicken

Instructions

  1. Preheat the oven to 375ยฐF. Line a baking sheet with parchment paper.
  2. Mix the breadcrumbs, egg, dill, lemon zest, onion powder, garlic powder, salt, and pepper in a large bowl. Add the ground chicken and mix until well combined.
  3. Scoop ยผ cup of the chicken mixture to form each meatball. Place them on the prepared sheet pan.
  4. Bake the meatballs for 20 to 25 minutes or until the internal temperature of each meatball is 165ยฐF.

Notes

Storage: Baked meatballs will keep in an airtight container for three to four days in the refrigerator.

Freezing: Once the meatballs are cooled to room temperature, place them on a sheet pan in a single layer. Freeze them for 30 minutes and then transfer them to a freezer bag or container. They will keep for several months.
