Ingredients
- 16 oz cream cheese, softened
- ยฝ cup sour cream
- 1 (1-ounce) packet ranch seasoning
- 1/3 cup lager-style beer
- 2 cups shredded sharp cheddar cheese
- 3 green onions, sliced
Instructions
- Add the cream cheese, sour cream, and ranch to the bowl of your mixer. Mix on medium speed until smooth. Adjust the speed to low and mix in the beer until well combined.
- Mix in the cheddar cheese and green onions. Cover and chill the dip for a few hours or overnight. Give the dip a good stir before serving it.
Notes
Cream cheese tip: It’s easier to mix softened cream cheese, but if you forget to leave it out at room temperature beforehand, no worries. Slice the block into cubes before you mix it with the sour cream. This will make it easier to mix if it’s cold.
Beer: You can use non-alcoholic lager-style beer in this recipe. It’s a great way to get the beer flavor without the alcohol.

Recipe Tips
There are many variations of this recipe out in the world, and my version is adapted from one I found on Taste of Home. I add some sour cream to make it creamier and green onions for a pop of color and fresh flavor. They make a big difference!
You can use an electric mixer or food processor to make this recipe. If you use a food processor, the shredded cheese and scallions will blend more into the dip, so there’s not as much texture.
I think a lager beer or light-style beer works best for this recipe. You can use a dark-style beer if you want a bolder beer flavor, but it will alter the color of the dip. You can also use non-alcoholic beer.
Cheddar cheese works great, but feel free to switch it to another cheese you like. I think pepper jack, gruyere, or gouda would be delicious.
