CHICKEN NOODLE SOUP | It’s no secret that boxed stock is no match for homemade, but I find that browning bone-in skin-on chicken breasts in some oil and butter and sauteing the vegetables in the browned bits left behind adds a boost to the otherwise boring boxed stock. The soup is hearty with a deep flavor that’s brightened with a squeeze of fresh lemon before serving.
CHICKEN POT PIE SOUP – Coffee and Crayons | I don’t know what I like best about this is that it has all the best things about pot pie including cute little biscuits. This is a twist on a beloved classic and, in case you’re wondering, it only takes an hour thanks to a smart shortcut. Hint: you won’t need a rolling pin for the biscuits.
CHICKEN EGG ROLL SOUP | A take-out favorite gets a soup makeover complete with a green onion and wonton crispies to garnish.
BUFFALO CHICKEN CHOWDER – Saving Room for Dessert | When you combine buffalo chicken with a creamy and hearty chowder you get a classic soup upgraded with a spicy kick. Some smoky bacon and blue cheese sprinkled over the top takes a classic bowl of chowder to a whole new level.
CHICKEN CORDON BLEU SOUP | This one’s made with tender chicken, ham, and plenty of cheese with easy homemade croutons on top! This is a cozy winter warmer.
MULLIGATAWNY CHICKEN AND WILD RICE SOUP – Proper Foodie | Mulligatawny is an English soup that pulls flavors from India into a bowl of total comfort. Ingredients can vary – it’s a recipe meant to use up all the odds and ends – but usually has some combination of rice, chicken, and apples with curry. It looks like a delicious winter warmer.

PESTO CHICKEN ORZO SOUP | This is a quick 30-minute small-batch dinner that makes enough for two people with some leftovers. It’s packed with fresh zucchini along with some pasta and a pop of pesto.

MEXICAN SLOW COOKER CHICKEN POSOLE – Isabel Eats | When I lived in New Mexico around the time the days started getting cooler posole would start showing up at work potlucks and get-togethers. Posole (aka hominy) is the same stuff used to make corn tortillas and Southern grits. When combined with chicken and a spicy sauce you get a bowl of comfort food you won’t forget. And, just like chili, it’s all about the toppings. I love the fresh radishes and cilantro Isabel used for her recipe. They add a bit of freshness to offset the richness of the stew.
