CHICKEN MEATBALL SOUP | Carve out an hour on the weekend to make this one and enjoy it all week. Tender meatballs, parsnips, and potatoes simmered in a flavorful broth make this weekend cooking project well worth the effort.

MEXICAN SLOW COOKER CHICKEN POSOLE – Isabel Eats | When I lived in New Mexico around the time the days started getting cooler posole would start showing up at work potlucks and get-togethers. Posole (aka hominy) is the same stuff used to make corn tortillas and Southern grits. When combined with chicken and a spicy sauce you get a bowl of comfort food you won’t forget. And, just like chili, it’s all about the toppings. I love the fresh radishes and cilantro Isabel used for her recipe. They add a bit of freshness to offset the richness of the stew.
