Green Salsa Eggs with Tortillas
This salsa verde eggs recipe is one of my favorite easy breakfast recipes. It looks complicated, but it only takes about 15 minutes to make, thanks to store-bought salsa verde. The eggs and salsa cook together, so you only need one skillet, and once they’re done, add some tortillas, cheese, avocado, and cilantro to finish it up. It’s so delicious!
Smoked Salmon Avocado Toast
Avocado toast with smoked salmon and everything bagel seasoning is so simple. Toast a slice of your favorite bread (I love whole grain bread), top it with avocado, a sprinkle of seasoning, and slices of smoked salmon. A sprinkle of fresh chives for garnish adds a nice pop of color and fresh flavor.
Homemade Blueberry Oatmeal
I love oatmeal – it’s a blank canvas you can dress up in so many ways, and this blueberry oatmeal with cinnamon and almonds is often in the breakfast rotation. I like to cook the oatmeal with water and then add milk (any kind you like works) to make it nice and creamy. You can add fresh or frozen blueberries, and just at the end, add some chopped almonds for a nice crunch. The whole thing takes about 10 minutes from start to finish!
Caprese Frittata
This frittata with fresh tomatoes, basil, and mozzarella cheese takes a little time, but most of it’s spent waiting for it to bake. The flavors are so fresh, and you can make it ahead and keep the slices in the refrigerator for a few days. They’re delicious cold, or you can warm a slice up in the microwave at 50% power so the eggs heat up slowly. This keeps them from getting too rubbery when you reheat them.
Peanut Butter Strawberry Toast
Here me out on this one: if you like a PB&J, you will love this strawberry toast. Slather a warm piece of toast with peanut butter, and then, instead of jam, top it with chopped fresh strawberries. It’s practically the same thing, but better, in my opinion.
Mocha Smoothie
I consider this banana mocha smoothie more of a breakfast snack. You know, when it’s mid-morning and something chocolatey, creamy, and cold with just a touch of caffeine sounds about right. You only need four ingredients to make it, and the combo of frozen banana, chocolate, and a touch of coffee really is so good.
Tomato Avocado Toast
Yes, another avocado toast because… well, why not? If you love avocado like I do, having it on toast several times a week is just regular life. And this version, a tomato avocado toast with balsamic glaze and mascarpone cheese, is a real treat.
Strawberries and Cream Oatmeal
This is more than just a bowl of oatmeal with fresh strawberries. I like to macerate the strawberries in just a little sugar first – it helps release the juices, which mix into the oatmeal and cream, lightly sweetening it and adding fresh strawberry flavor. It takes a couple of extra minutes, but it’s worth it.
